Cocoa butter that facilitates tempering and ensures a fluid chocolate.
Instructions for 100g of chocolate: put your chocolate to melt in a bain-marie. Heat up to 40-45 ° C. Take out the bain-marie and add 1g of cocoa butter. Let the temperature drop to 34-35 ° C (dark choco) or 33-34 ° C (choco milk or white). Then mix with a spatula until reaching 31-32 ° C (dark choco) or 29-30 ° C (choco milk or white). Everything is ready you can use your chocolate!
Ingredients: 100% cocoa butter. Allergens: may contain traces of nuts, gluten, eggs, milk, sesame seeds, lupine and soy.
Store in a cool, dry place. Do not ingest as is. For foodstuffs. Close the bag tightly after use.
