Ultra practical because in gel!
Glucose has a lower sweetening power than sugar and a fairly viscous texture and comes in the form of a thick, colorless syrup. In baking, it is used to prevent the crystallization of sugar, nougatine, boiled sugar candies, soft caramels, fruit jellies, gummies and marshmallows. It also prevents the almond paste and candied fruit from drying out.
